Happy Friday friends – hope your week is wrapping up well. We are throwing a couples baby shower this weekend… so the house is full of crafts and fun party things. Its the easiest shower-slash-party I’ve ever planned (I think I’ve finally figured out this delegating thing). But I think when Sunday rolls around I’ll be ready to plop on the couch and veg.
When I was little one of the many things I wanted to be was a ballerina. I took dance, but my body and personality didn’t really fit into ballet as well as it did other places. (We’ll talk how wonderful tap was another day.) Ballerinas are full of grace and poise and beauty and they use movement so well to express feelings and stories… So here in the middle of the warmest Texas winter I’ve ever had – I was inspired by this short film and wished that it was just a little colder here.
Made this last night for a potluck dinner. It was a hit. And I loved that there was something healthy there for me to eat – so as not to totally ruin what I did at the gym that morning.
Brown Rice with Shrimp and Avocado

Forget frying it—brown rice has a firm texture that stands up to the zesty dressing in this simple but exceedingly tasty dish that you can toss together in minutes. Chunks of avocado add buttery notes and are loaded with good-for-you monounsaturated fats (the heart-healthy kind), antioxidants, and vitamins A, C, and E.
1 lb raw medium shrimp, peeled, deveined, rinsed, and drained
4 slices fresh ginger, smashed lightly with the flat side of a knife
2 Tbsp rice wine or sake
2 ripe avocados, peeled, pitted, and diced
Juice of 1 lemon, divided
4 cups cooked brown rice, room temperature
1 cup chopped fresh flat-leaf parsley
1/2 cup chopped fresh cilantro (leaves only), or dill, tarragon, or another herb of your choice
DRESSING:
1/3 cup low-sodium soy sauce
3-4 Tbsp rice vinegar
1 1/2 Tbsp rice wine or sake
1 1/2 Tbsp toasted sesame oil
1 1/2 Tbsp sugar
1/4 tsp salt
1. Combine all dressing ingredients in a small bowl.
2. Using a sharp knife, cut shrimp in half lengthwise along the back. Place in a bowl, add ginger and rice wine, and toss lightly.
3. Bring 2 quarts of water to a boil in a large pot. Add shrimp and marinade, and cook for 2 1/2 to 3 minutes, until cooked through. Drain in a colander, discard ginger slices, and let shrimp cool.
4. In a large mixing or serving bowl, lightly toss avocado with half the lemon juice. Add cooked shrimp and rice. Add remaining lemon juice and toss. Add dressing, parsley, and cilantro, and toss lightly. Taste for seasoning, adding more salt if necessary. Serve at room temperature or chilled.
MAKES 6 SERVINGS.
Per serving: 400 cal, 16 g fat (2.5 g sat), 43 g carbs, 700 mg sodium, 7 g fiber, 21 g protein
Who doesn’t love a great cover? And I’ll always take a great cover -especially if its a cover of a nineties grunge song sung in a high hauntingly etherial voice. Yuna’s “Come As You Are” is driving my Monday as I work on projects for the week.
This week has been has definitely had its highs and lows – but overall I’m just tired. Physically, emotionally, spiritually. Just kind of in need of an all around nap. Waking up crazy early and staying up super late every day hasn’t helped. You know when you have a week that is just kind of overwhelming – and you’re not sure why? I mean there are things that are both good and bad – and at the end of it all you just want to curl up with a sappy movie and a glass of wine? Yeah. So after I get off today – I think I’ll try to indulge in just that.
Kate Arends posted on throwing a proper pity party – and I find it perfectly on point. Kate – I think I’ll join you in wallowing a little this weekend – and I’m sure on Monday everything will be different.
- Getting up at or around 5 every day this week and not going to sleep until after midnight is starting to take its toll on me… so its lots of lattes for me today!
I stumbled across this wedding video the other day… wedding videos used to be pretty generic… not necessarily well done – but the way that they are being filmed now feels more like a short film. I watched this one twice – and cried – hysterically. Maria’s face is so expressive – you could really see the joy in the moments of the beginning of their marriage.
I often regret not having a videographer at our wedding – but this style of wedding videography was just not as common when we got married. What about you? Did you have a wedding video? Do you want one?
I’ve been wearing a lot of my favorite black pants and dark jeans… but I think I’m ready to brighten it up a little. I’m loving all of the brightly colored jeans everywhere… I think I’d really like a pair in red, or maybe pink… or possibly green. Yeah… lots of options. And who doesn’t love options?
I can’t wait for the new Wes Anderson film. It looks amazing. I was obsessed with the idea of summer camp as it was in the 50′s as a little girl. I thought it must have been the most amazing thing. I also thought that there was a really romantic thing to running away with a friend (not forever… just a for a night.) (I accredit this to the American Girl Doll books on Molly.) So this definitely appeals to my childhood nostalgia.
